(credit to Mom Blood)

INGREDIENTS:
8-10 medium potatoes (peeled or unpeeled. Your choice)
4-5 eggs, hard boiled
1 tsp. mustard
1 T. relish (add more if you like relish. I don't)
1/2 cup mayo
1/2 cup Miracle Whip
onion salt

DIRECTIONS:
1. Dice potatoes and boil in water salted with onion salt until soft (about 15 minutes).

2. Mix together mustard, relish, mayo, and Miracle Whip in a large bowl.

3. Peel eggs and dice. Add to bowl.

4. When potatoes are done, add to bowl. Mix everything together. If salad seems dry, add 1/4 cup more Miracle Whip. Sprinkle with paprika and chill 3-4 hours before serving.

Baked Potato Soup

(credit to Kellie)

INGREDIENTS
2/3 cup butter
2/3 cup flour
7 cups 2% milk
4 large potatoes, baked, peeled, and cubed (I "bake" them in the microwave)
4 green onions, sliced
6 strips bacon, cooked and crumbled
1 cup sour cream
¾ teaspoon salt
½ teaspoon pepper
3/4 cup shredded cheddar cheese
3/4 cup shredded sharp cheddar

DIRECTIONS
Heat butter in large sauce pan. Add flour and whisk until smooth. Add milk and stir until thickened. Be sure to stir constantly and scrape the bottom of the pan, or the milk will burn. Then add potatoes and onion. Bring to a boil, stirring constantly. Reduce heat and simmer for 10 minutes. Add bacon, sour cream, salt and pepper. Add cheese just before serving. Can be served in bread bowls.

Mashed Potatoes

INGREDIENTS
8 potatoes, peeled and diced
1/3 stick of butter/margarine
2 Tablespoons cream cheese
½ cup sour cream
½ cup milk
salt, pepper, garlic powder, onion powder to taste

DIRECTIONS
Boil potatoes for 20 minutes (until you can easily stick a fork through one). Drain, mix with all ingredients. Mash (or blend, if you want REALLY smooth potatoes).
If potatoes are dry, add more sour cream or milk. If they’re grainy, add more butter.

White Cheddar Scalloped Potatoes

(credit Taste of Home)

INGREDIENTS
1 medium onion, finely chopped
¼ c. butter, cubed
¼ c. all-purpose flour
1 t. dried parsley
1 t. salt
½ t. pepper
½ t. thyme
3 c. milk
1 can (10 ¾ oz) condensed cream o mushroom soup
1 c. sour cream
8 cups thinly sliced peeled potatoes
3 ½ cups fully cooked ham (I NEVER use this much. Put as much as you want)
2 c. (8 oz) shredded white cheddar

DIRECTIONS
In large saucepan, saute onion in butter until tender. Stir in flour, parsley, salt, pepper, thyme until blended. Gradually add milk. Boil. Cook & stir 2 min—until thick. Stir in soup. Remove from heat. Stir in sour cream until blended.

In large bowl, combine potatoes and ham. In greased 9 x 13 dish, layer ½ potato mix, cheese, white sauce. Repeat layers. Cover and bake at 375 for 30 minutes. Uncover and cook 40-50 min longer until tender.

Baked Potatoes

If you don't feel like waiting the hour or so to cook baked potatoes in the oven, you can also do it in the microwave.

DIRECTIONS
Wash potatoes. Poke each potato several times with a fork (otherwise they tend to explode). Rub each potato down with margarine or oil, sprinkle with salt and wrap in plastic wrap. Place in microwave, press "potato" button (ours does up to four potatoes at once). Unwrap, cut in half. Serve with butter, sour cream, chives, bacon bits, cheese, salt, pepper, and whatever else you want

Potato Cheese Soup

(credit to Kellie)
INGREDIENTS
4 medium potatoes, peeled and diced
1 teaspoon onion powder
4 cups water
¼ cup butter or margarine
3 Tablespoons flour
½ cup milk
1 ½ cups (6 ounces) sharp Cheddar cheese (you can do part mild cheddar if desired)
1 teaspoon salt
¼ teaspoon seasoned salt
¼ teaspoon paprika
1/8 teaspoon pepper
chopped chives or parsley

DIRECTIONS
Combine potatoes, onion powder, and water in heavy saucepan. Bring to boil; reduce heat; simmer until tender, about 20 minutes. In heavy skillet melt butter; add flour; cook and stir until mixture bubbles. Remove from heat; stir in milk. Return to heat; cook and stir until thickened. Stir mixture slowly into potatoes, UNDRAINED, cook and stir until thick. Add cheese and seasonings. Serve with chopped chives or parsley. Can be served in bread bowls.
NOTE: Sometimes using some American cheese and some regular cheddar can help you get a creamier texture.
