Brown Sugar Dilled Carrots

(credit to allrecipes.com)

Ingredients

    * 1 bag baby carrots
    * 2 tablespoons butter
    * 2 tablespoons brown sugar
    * 1 tablespoons chopped fresh dill
    * 1/2 teaspoon salt
    * 1/2 teaspoon black pepper

Directions

1. Steam carrots until tender (this takes a LONG time--you can use diced carrots if you want, they would cook faster).

2. In a skillet over medium heat, melt butter.  Add carrots.  Stir in brown sugar, dill, salt, and pepper.  Cook until sugar has melted.

Herbed Corn

(credit to Kellie)

INGREDIENTS (This recipe makes a TON of corn--the amounts I make are in parenthesis)
12 cups frozen corn (3 cups)
1 cup water (1/4 C)
1/2 cup REAL butter, cubed (1/8) (real butter tastes much better in this one)
2 Tablespoons minced fresh parsley (1/2) (or 2 teaspoons dried parsley(1/2))
2 teaspoons salt (1/2)
1 teaspoon dill weed (1/4)
1/2 teaspoon garlic powder (1/8)
1/2 teaspoon Italian seasoning (1/8)
1/4 teaspoon dried thyme (1/16)*

In a large saucepan, bring corn and water to a boil. Reduce heat; cover and simmer for 4-6 minutes or until corn is tender. Drain; stir in the remaining ingredients.

*I realize that some of these measurements are ridiculously small. Just eyeball it--it will turn out delicious anyway.
