Garlic Chicken Pizza

(credit to Food.com)

INGREDIENTS

    * 1 pizza crust, uncooked
    * 1/2-3/4 cup prepared alfredo sauce (I buy the cheap stuff in a jar)
    * 3 tablespoons minced garlic, divided
    * 1 boneless skinless chicken breast, cubed
    * 1/4 cup shredded parmesan cheese
    * garlic powder
    * italian seasoning
    * 1 1/2 cups shredded mozzarella cheese
    * 2 roma tomatoes, diced
    * 2 green onions, sliced
    * additional parmesan cheese, if desired

DIRECTIONS

   1. Cook chicken in frying pan.  Add garlic powder and Italian seasoning to taste.
   2. Mix garlic with alredo sauce and spread over dough with rubber spatula. Don't put too much sauce
        on--keep it very thin or the crust will get soggy.  Sprinkle with garlic powder and Italian seasoning.
   3. Sprinkle chicken mixture evenly over sauce.
   4. Top with shredded mozzarella. Sprinkle with tomatoes and onions. Sprinkle with additional Parmesan
       cheese if desired.
   5. Bake at 425 for 15-18 minutes.

Breadsticks

Use the pizza dough recipe for the dough.

DIRECTIONS:

Roll dough out on floured surface. Use a pizza cutter to cut dough into strips. Place strips on cookie sheet (you can twist them for a fancier look before you put them on the cookie sheet). Cover--let rise for 20 minutes.

Sprinkle with garlic powder and Parmesan. Cook at 350 for 10 minutes, or until bottom edges of breadsticks are golden brown.

Calzones

(credit to Kellie)

INGREDIENTS
1 cup warm water
1 package (about 2 ¼ teaspoons) yeast
1 teaspoon sugar
3 ½ cups flour
1 ½ teaspoon salt
2 Tablespoons oil
desired calzone innards--sauce, cheese, pepperoni, etc.

DIRECTIONS
Dissolve yeast in water. Add sugar, let rise for 5 minutes. In a large bowl, pour yeast mixture then add, salt, oil and 2 cups flour. Mix. Gradually add rest of flour. Put in greased bowl and let rise 1 hour.

Divide into 4 portions. Roll out dough into circle, place toppings on one half. Fold the other half over and pinch closed at the edge. You can sprinkle the top with Parmesan and parsley if desired. Bake at 425° for 15 minutes. Serve with leftover sauce as a dipping sauce.

Pizza Crust

Just a quick note--I am NOT a good pizza dough maker. I should probably take a class on it (or just ask Adrian and Spencer). This one works well for me. Best of luck to you all.

INGREDIENTS:
2 1/4 teaspoons active dry yeast (1 packet)
1/2 teaspoon brown sugar
1 1/2 cups warm water (110 degrees F/45 degrees C)
1 teaspoon salt
2 tablespoons olive oil
3 1/3 cups all-purpose flour

DIRECTIONS:
In a large bowl, dissolve the yeast and brown sugar in the water, and let sit for 10 minutes.
Stir the salt and oil into the yeast solution. Mix in 2 1/2 cups of the flour.

Turn dough out onto a clean, well floured surface, and knead in more flour until the dough is no longer sticky. Place the dough into a well oiled bowl, and cover with a cloth. Let the dough rise until double; this should take about 1 hour. Punch down the dough, and form a tight ball. Allow the dough to relax for a minute before rolling out (I divide the dough in half and can get two decent sized pizzas out of it).

Stab rolled-out crust with a fork repeatedly before topping with ingredients. Preheat oven to 425 degrees F (220 degrees C).

Bake pizza in preheated oven, until the cheese and crust are golden brown, about 15 to 20 minutes.

*This works REALLY well in a bread machine.

*If I double this recipe I can get two large pizzas and a batch of breadsticks out of it.
