White Cheddar Scalloped Potatoes

INGREDIENTS
1 medium onion, finely chopped
¼ c. butter, cubed
¼ c. all-purpose flour
1 t. dried parsley
1 t. salt
½ t. pepper
½ t. thyme
3 c. milk
1 can (10 ¾ oz) condensed cream o mushroom soup
1 c. sour cream
8 cups thinly sliced peeled potatoes
3 ½ cups fully cooked ham (I NEVER use this much. Put as much as you want)
2 c. (8 oz) shredded white cheddar

DIRECTIONS
In large saucepan, saute onion in butter until tender. Stir in flour, parsley, salt, pepper, thyme until blended. Gradually add milk. Boil. Cook & stir 2 min—until thick. Stir in soup. Remove from heat. Stir in sour cream until blended.

In large bowl, combine potatoes and ham. In greased 9 x 13 dish, layer ½ potato mix, cheese, white sauce. Repeat layers. Cover and bake at 375 for 30 minutes. Uncover and cook 40-50 min longer until tender.
