Empanadas

INGREDIENTS:
1.5 cups plain Mexican rice (no additions like tomatoes, green onions, etc.)
1 chicken breast, cooked and cubed
1/2 cup sliced green onions
1/4 cup sliced olives
1 cup shredded cheddar cheese
2 pie crusts--you can either make them or buy them
1 egg yolk
1 T. water

DIRECTIONS:
Prepare rice (you only need 1/2 of the normal recipe). In a large bowl, combine chicken, cheese, onions, and olives. Stir in rice.

Preheat oven to 400. Roll pie crust into a 12 inch circle. Spoon 1/2 rice mixture onto half of the circle; fold pie crust over and press edges to seal. Repeat for second pie crust. Place on baking sheet.

Beat together egg yolk and water; brush over top of empanadas.

Bake for 20-25 minutes or until golden brown. Cut in half to serve--serve with salsa and sour cream.
